Onam Special Sarkara Varatty Recipe | Kerala Banana Jaggery Sweet

Sarkara Varatty (or Chakkara Varatty) is a traditional Kerala sweet snack made with ripe Nendran bananas, jaggery, ghee, and a touch of spice.

It’s a classic Onam Sadhya sweet, often prepared in advance and enjoyed as a side or festive treat.


๐Ÿ“ Ingredients

Ripe Nendran bananas – 3 large (cut into small pieces)

Jaggery – 1 ½ cups (grated or powdered)

Ghee – 3 to 4 tbsp

Cardamom powder – ½ tsp

Dry ginger powder – ¼ tsp (optional)

Water – ½ cup


๐Ÿณ Preparation Steps


Step 1: Prepare the Jaggery Syrup

1. Heat ½ cup water in a pan.

2. Add grated jaggery and stir until fully melted.

3. Strain to remove impurities.


Step 2: Cook the Bananas

1. Peel and slice bananas into small cubes.

2. Heat 2 tbsp ghee in a heavy-bottom pan.

3. Fry banana pieces until soft and lightly golden.


Step 3: Combine & Thicken

1. Add the jaggery syrup to the cooked bananas.

2. Cook on low flame, stirring continuously, until it thickens.

3. Add remaining ghee, cardamom powder, and dry ginger powder.


Step 4: Final Touch

1. Stir until the mixture leaves the sides of the pan.

2. Remove and let it cool.

3. Store in an airtight container.


๐Ÿด Serving Suggestion

Serve as a side dish in Onam Sadhya.

Keeps well for 1–2 weeks when stored properly.

Cook on a low flame to avoid burning.
